Meats Loaf.

2 lbs. venison
½ lb beef
½ lb. pork
2 eggs
A couple handfuls (about a cup or so) of smashed mesquite BBQ potato chips (crumbs)
4 tbsp. Worcestershire sauce
A good dollop of Sweet Baby Ray’s BBQ sauce
1 (10 oz.) can tomato & green chilies
1 lg. onion, chopped
a good amount of dry mustard... about a tablespoon or so
1 tsp. parsley, chopped
A cup burgundy wine (for the loaf. The rest is for you.)
Some Paprika (you should be putting this on EVERYTHING)
Some Nutmeg
Minced Garlic (just enough to taste)

Grind venison, beef and pork together (a fun job for the kids). Combine with remaining ingredients (save some of the onion and mix with brown sugar and just put it in a bowl and let it hang out for a bit.) Form into a loaf (duh); place in an ungreased pan. Bake it in a preheated oven at 350 degrees for an hour or so. When there’s about 30 minutes left, spread the mix of brown sugar and diced onions on it. Go ahead and put some more BBQ sauce on it too, if that’s what you’re into. I am. I also like to put some paprika and minced garlic on it. Then, pop it back in. Please serve it with mustard. (trust me… MUSTARD!)
